Series 2 Apple Watch Sport, watchOS 3.1. This is a new issue as of 3.1 as far as I can tell since I never saw it in 3.0.
Essentially the problem is that, occasionally (twice so far since 3.1 has been generally available), the Watch display does not stay awake long enough to interact with. This is true even while interacting with it, i.e. the display will fall asleep even while I'm using it. This regardless of raising-to-wake or tapping-to-wake the display: it will stay lit for about 2-3 seconds.
A Watch reboot fixes it (temporarily, apparently). Note that the display will also fall back asleep after it's been awoken by pushing the crown in to bring up the shutdown slider. Something clearly funky here.
I am a frequent abuser of the "water drop lockout" mode to prevent false inputs from staticky sources (clothing, etc). Perhaps this is a variable in the equation.
