I have an Apple Watch series 5 Cellular 40mm (space black stainless steel, best color ever) which I use quite heavily (I got it replaced under AppleCare earlier this year bc the battery was too worn down). It's on watchOS 10. I use it a lot for workouts, mostly running, which I do 5-6 days each week while listening to music.
Whenever I try to pause a running workout, it can take it up to 30 seconds before pausing. It keeps running until then, but when it does pause, it resets back to all the stats, time, etc that it was right when I pressed the pause button. This is super annoying especially if I want to time something.
Also, if I pause the workout for too long, it will end it. Completely. Back to the main page of the workout app. This is probably the worst bug of all, because if I'm doing a custom workout (intervals or something), I could be in the middle of it and then have to remember what interval I was on, have to restart the workout from the beginning, stop it when I've done as much as I was planning to, and will end up logging 2 partial workouts instead of 1 full one.
My final bug: It also takes up to 2 or 3 minutes after starting the workout before it starts tracking. Heart rate, pace, etc are blank and it just does nothing until it finally starts a couple minutes later.
Does anyone else have these bugs? Is my watch just too old? I was going to wait for the Apple Watch series X/10 to come out next year, and maybe get a Garmin 265 to take care of my workout needs. The Garmin is better for running anyways.

are you on 10.1.1? if not, upgrade to that.
have you tried rebooting the watch?
have you had these issues/observations on watchos9?
I typically don't pause my workouts so can't answer some of those questions

Are you experiencing any other apps not behaving in watchOS 10? Or slowness?

You could contact Apple support since you upgraded to 10, one thing they will likely suggest will be to un-pair/re-pair and should you go down that path I’d suggest setting it up as new vs restore from backup.
 
I have a S5 Space Black 44mm that I used all last week to do 30min morning walks with and I didnt see any pauses like that , however we may have slightly different use cases.

To confirm, you're using your watch in cellular mode - while also listening to music and doing a run in the exercise app - without a phone tether?

If so, then maybe eliminate like music for a few runs and see if it happens again. Or bring your phone etc etc. Try to find where it works/breaks down.

S5 cellular here. That’s exactly what I’m using mine and I don’t have any delay in pausing (pressing clown and side button together).

I have to pause by pressing the button on the screen, because I set the crown + side button to take a screenshot

Also, one more bug (unrelated to workouts though): Occasionally the screen will just completely turn off. Everything works, and I can tell that it senses taps and swipes and such because of the haptics. But the screen is completely black.
It will usually fix itself after a couple minutes. If I restart it, it will come back on perfectly fine. But to restart it, I have to take the risk of accidentally swiping the Emergency SOS slider, so it's a little treacherous.
