My Series 6 watch was working perfectly, updated software to 9.1 and lost the color red and yellow on watch face. Went through several troubleshooting calls with Apple Support and was referred to the Genius Bar at local Apple Store. Bottom line, there’s nothing they were willing to do except replace the display at $349. Summary…watch was working great, next morning after software update I had lost the color red and yellow on watch face. Only solution was for me to buy a new display. Looks like the Apple update strategy includes forcing me into a newer watch?
 
Apple doesn't replace displays, batteries or for hardware related issues on watches , they replace the unit with a refurbished one... Maybe you should try escalating the issue with customer service. If the watch isn't covered under warranty anymore, you won't have much of a chance getting a replacement without cost but it doesn't hurt to try..
 
I've got a Series 6 on 9.1, and still have full use of all the colours of the spectrum on it. Sounds like a display issue.

I'll second what kitKAC said--I have been on the update for a while with no issues with color. May have just been a coincidence that you lost those colors when you updated. Sorry to hear!

Edit: I know for iPads/Macs, sometimes with additional heat, it will mess with the soldering of the connectors. It's rare, but I have heard of this happening. Perhaps that additional heat from the update caused this.
