Are the screens and scratch resistance going to be the same on the aluminum and stainless?

The new aluminum case almost looks like a powder coated design that may also be more resistant.

My 2 year old Space Black is flawless but spending another $800 for the 7 is $$$$$.

Thoughts?

Have you been able to find that posted? I can't find anything yet on Apple's site comparing the models

Good question. I thought I had seen it documented somewhere but at a glance cannot find it.

Unless something has suddenly changed, the SS model should have a more scratch resistant screen versus the aluminum. Those concerned about scratches with the aluminum should consider using a screen protector or getting a minimalist front screen cover like this, which works well for the current models.

Sapphire on SS/Edition models, Ion-x on aluminum just like past models. Apple isn't going to give you the expensive screen on the sport models. Has to be incentive to spend the extra $$$

Are you able to find that anywhere is writing? So far they havent said many details. I know its always been that way in the past.

All they have said:

Apple Watch Series 7 is the most durable Apple Watch ever, with a stronger, more crack-resistant front crystal.

Bug is right. Apple isn't going to offer the same screen for the SS in the aluminum model. Apple has said that the new screen is more durable in the sense that it is more shatter resistant. The aluminum model will get scratched on the screen at some point, no matter how careful one is.

Unfortunately Apple has always been tight lipped with there tech specs on there website. I'd say ifixit or some other entity will do an in-depth teardown after the release with all the tech details of the S7

Flip the AR version on Apple‘s site; the Aluminum model has the Ion-X glass still. It‘s written on the back.

The OP's point is that Apple has not documented it anywhere, it appears. I thought I'd it noted somewhere but looking on Apple's website it's not there (yet).

Apple's website does detail the ion-x and sapphire for the S6, but does not have anything documented (yet) for the S7.

Good spotting!
