Series One watchOS 3.1.3 pairing issues

Hello all,
Trying to setup and pair a Series One. The watch app says it needs and update, then confirms the watch is on the latest os of 3.1.3. At this point, it does not give a step forward to leave the mandatory update screen (feels that there is some trigger in the app to not pair really old watch os versions).
If I cancel, then it gives me two options:
1) Exit and Reset Watch
2) Continue Update

neither option continues with the pairing process. Hopefully someone can share a work around

Series 1 runs through watchOS 6.3 and no further. But for pairing and updating, you prolly need to find an iPhone 5s or iPhone 6s that runs iOS 12 or so, which is going to be tough. I feel updating across multiple versions is why it can’t get past update screen, plus series 1 only has 8GB of storage, so software update is going to be even harder.
