The title says it all, I am honestly very annoyed that to listen to a music file I need to right-click and select to open it with QTP or use the quick look function, but if I go to the desktop, it just stops playing it. Opening with iTunes (default program) adds them to my music library, but I don't want to, so I have to delete them. Setting a file's default application results in only changing the default program of that specific file. I want ALL MP3 files to open automatically with QTP without having to set up each file manually.

If it's possible, how I do this?

Go to the Info for any mp3 file.

On that file's Info bar/thing, in the lower half, you can select the app to "Open with"

When you select an app in that pull down menu, you can hit the button that says "Change All"
 
I'm glad that helped!

And I use VLC for most all music files (drag and drop into iTunes if I want to add it to iTunes), and MPlayerX for video files.

Just a personal preference, but it might be better than using Quicktime player as an mp3 software.
