When I upgrade to the iPhone 7, I'd like to set up as a new phone. However, I have a few apps that I'd like to save the contents of. Is it possible to somehow restore the contents of just a few select apps?

Not unless something changed in iOS 10. I know in iOS 9 you were not able to becuase I ran into that same issue as well.
