Set up iPhone 5 with old iPhone back up but still use old phone for few days??

Can I still use my old iPhone 3GS for a few days after setting up my new iPhone 5 with a back up from the 3GS, until T-mobile transfer my old number to my new iPhone 5 contract?!?

Once you activate the 5 your old phone stops getting service, correct? Mine did.

I don't think it will because if I set up and activate my iPhone 5 today on T-mobile, my iPhone 3GS is on O2 and T-mobile have told me that they won't transfer my number from O2 until Monday, so I think I'll still have O2 signal on the 3GS until Monday and I think I'll have T-mobile signal (on a temporary number). This one has really got me stumped!
