I wear my Ultra 2 during the day and want to set up my S7 SBTi for sleeping at night How do I stop the haptic feedback so it does not vibrate at night. I know I can do it in "Sounds" on my iPhone, under the watch app, but I am afraid I will forget and do not want my Ultra 2 to be changed if I forget to set it back. Does the Theater setting stop haptic feedback?

Settings like that are watch-specific, not global. If you have multiple watches paired with your phone, each can have its own settings for brightness, notifications, haptics, and the like. In practice it works out just fine.

I have a day watch and a night watch for this exact reason (sleep tracking) and have been operating that way for many years now. The only real annoyance that I run into is that you have to isolate the watches when it's time to do a watchOS upgrade otherwise the "auto switch" feature can block the upgrades.

jz0309 is correct, also, that using a sleep focus will really make everything go smoother.
