Every type of email I've used defaults to sorting by Date with the newest messages on top (including the iPhone and the MobileMe web interface).....except Apple's Mail.app which defaults to sorting by Date with oldest on top.

I know I can click the Date column and change the order to newest on top but then I have to do that on each folder I go to until I've done it to them all.

I'm sure there has to be some way to set the overall default sorting to Date with newest on top but it's escaping me.

Frustratingly, I think the only way to do it is as you described. Even if you select multiple mailboxes as you sort, it still seems to retain each individual view's sort order.
