setting up a projector, an Apple TV, and a sonos system?

Hey guys,

I'm trying to setup a Sonos system (player for all intents), an older Apple TV (non4k, no optical out) and an Epson projector. Normally I 'd connect my player to a tv using an optical cable, but alas.. that doesn't work here as the projector doesn't have optical out. So, anyone have any pointers on how to set this up?

there are boxes that will split the audio out of an HDMI cable
