It is possible to set up some sort of Virtual display in OS X that I can use to demonstrate dual monitor functionality without having to lug out another monitor?
 
Can you do that in spaces? I mean like virtually expanding one display onto another monitor, specifically to demonstrate how full screen apps are affected in OS X Lion (the grey matte finish on the secondary monitor).

Not really, but I also don't know of any other way to do what you want to do. What about lending a display at the place you are? Or even a TV?

I guess I'll just do that. I just didn't want to have to move the monitors in the house around.
