Setting up as a "new" phone

When Beta 1 came out I restored from a back up. I'm getting poor battery life (could be from lots of different things) all of a sudden now. When Beta 2 comes out I'm going to install the OS and set up as a new phone. Will I need to do an Option+Restore to pick the Beta file or just a regular restore?

Regular restore. Just be sure that your UDID is registered or else you'll be locked out of your phone when you restore.
