I know that the iPhone is still generally unavailable at both Apple and AT&T stores. But is it possible to call AT&T and set up everything beforehand (credit check, application, porting of your number) so that when the iPhone is eventually available (hopefully within a few weeks), all you would have to do is go to the Apple or AT&T store and sign and pay (with them able to pull all your necessary information from AT&T's system). Seems to me that it would speed up the process if this is possible.

Does anyone know if you can call AT&T and do this?

If you don't have an AT&T account already i advise going down to the store and running a credit check their and getting everything in line. You could do it over the phone but...meh.

Doubtful, they'll need some picture ID before they run the credit check.

Also, the credit check is only good for thirty days. So, if you don't open your account within thirty days, they will have to run another one.
