Setting up new iPhone - 3 zoom options, but only 2 once set up?

So when you set up a new iPhone it asks you to choose a display zoom option - Default medium or large.

But once you’re set up, and you want to change to display zoom, it seems you only have normal and zoomed? What is the mysterious third option you only get at set up and how does it related to the normal and zoomed options you then have going forward?

Text size is a different setting. You can set a display zoom option but you can also separately change text size. I would assume that's where the confusion comes from. Text size is further up at the top of these display settings.

so the three options you get when setting up a new iPhone are standard, zoomed, and zoomed with larger text..?
