Setting up New iPhone - Quick Start vs itunes restore

Hi, I just bought used iPhone 13 Pro max to replace my wife's XS Max. She is using around 350gb on her current XS Max. Her iPhone is backed up to her itunes. What will be the easiest/fastest way to setup the new iPhone? Quick start or iTunes restore?
