Setting up phone as new while keeping certain info

Hey guys, so I've been jailbreaking since my original iPod Touch and now through my 3Gs, and as much as I love it, sometimes I notice it leaves info on the phone throughout the backups, and takes up space on the phone, like let's say I jailbroke, installed sbsettings, and turned on the battery percentage. If I updated and restored the phone, re-jailbroke and installed sbsettings again, the setting would automatically be applied, same with something like barrel. And also I'm pretty sure it leaves other things like that in the backup. I've always wanted to just set up the phone as new to be fresh, but I didn't want to loose my messages and game saves (I don't want to play 3 angry birds games to the fullest again lol) so is there a way to set the phone up as new, to start on a clean slate, but still able to keep text messages and game saves? Is that in someway possible? Thanks for any replies.
