I want to setup my iPhone as new phone now because I've been getting some battery issues lately.

So clearly I have to restore my phone, my question is, how do I get back all my data without restoring from a backup? Such as photos and contacts. I don't really care about text messages and such.
 
You can sync your photos back from your library.
As far as your contacts you gotta go into the "info" tab when you plug in your iphone and save/transfer them to address book, outlook or many other things available to copy them to by pressing sync.
And then once you restore and setup as new you can sync your contacts back thru itunes also.

Do what Applejuiced wrote, but first backup your iPhone and then copy your backup folder somewhere safe. Then if you screw it up you can restore from the backup and try again.
