When I get my new SSD, I want to set it up (obviously) by myself. I have kept a up-to-date backup on an external drive. I have an enclosure if needed. So how do I set it up. I plan on (maybe) installing and then booting into the Recovery disk. From there what do I do in Disk Utility?

You can do it a few ways. If you have another Mac you can put it in target disk mode and restore from the other computer. If you have a time machine you can simply boot from that disk and restore, if you have the old OS disk in an enclosure you can restore from it. As long as you are on Lion you should be able to do any of these to a clean disk (I know for a fact you can restore from time machine to a clean disk)
