Sharing and file permissions in Leopard

I have:

- mini with external disks (my file share)
- Did a clean install of Leopard
- 2 macbooks that were achieve and installed with leopard

I have file shares setup to share all of my music and photos... The problem is, I can no longer modify permissions on any of the files in the share from the remote machines and am at a loss as how to fix this.

Also, what's the difference between setting up a share using system preferences or hitting apple + i and clicking on the 'Shared Folder' button...

Anyone?
