In my documents folder, I have a multitude of other folders that have folders within them and so on. I want all the folders to be "Read and Write". However there are many folders within folders that are "Read Only". Is there a simple way without going through each folder and making them all "Read and Write". I have a current list of the many folders that are "Ready Only" but I am worried others will pop up later.

I am a relatively new Mac User (~1 year) so am not very good at the Terminal but depending on the example I have to follow can try to use it if necessary.

It's quite simple actually. Just go to the top level folder (Documents) then right-click and bring up the Get Info window. Next go down to the Sharing & Permissions section. Set the access to be read & write for that folder, then click on the cog icon to the right of the + - icons and select "Apply to enclosed items" and you should be all set after the command completes.
