Bought myself iPhone XR and everytime I want to grab iPhone when its locked I accidentally turn the flashlight on. Is there a way to change what is accessible from lock-screen? I mean via shortcuts?

Those should only turn on through a long press. Is it that you are picking up the phone exactly having your finger right on one of those buttons and keeping it on it for a longer period of time to activate long press?
 
What do you mean by long-press (how long)? And is it changeable?
I think I do not long press, but it depoends what iPhone thinks long is?

Long press is when you touch something and keep your finger on it for longer period of time (longer than a tap basically), for example like when you'd touch an app on a home screen to get to mode where you can move it around or delete it.

I don't believe there's a way to change it.
