I don’t know if this would be possible with the shortcuts app or it would have to be an official watchOS feature.

the idea is to have the watch auto change the watch face per your location.

if your at the gym, the face changes to an activity face, if your at work l, set to your desired work face, at home a more casual face...etc.

what are your thoughts?
 
Location is one of the triggers In Shortcuts that sends a notification instead of fully automating the action. Saw that iOS14 eliminated some of the notification based automations but unfortunately, location, I believe, wasn’t one of them. You’d have to run the automation by responding to the notification either on your watch or phone.

And if not clear (was not for me), the watch face setting is in WatchOS 7 beta.

A possible option for workouts, in the future, use the "when workout starts" event. This event, currently, does not require a response for some actions (eg. I have one that puts devices into Do Not Disturb, one to turn off DnD when workout ends, no response on my part needed).
