Apple knows that privacy is a growing concern not just digitally but physically, so why not allow these advanced LEDs to limit the transmission angle to only the direct viewer and self-polarize (or something) akin to what a privacy screen does to limit eavesdropping from wondering eyes?

I feel like this feature alone would help with even iPhone’s ability to draw military or business contracts.

It’s almost a guarantee that such a feature would be industry leading and instantly garner more desirability in a feature-crowded market.
 
Can you link to an existing consumer device that features built-in, toggleable privacy screen functionality? What's the effect on image quality, device thickness and price?

Permanent privacy screen functionality would reduce perceived image quality (reduced off-angle visibility, likely lower / less uniform color accuracy) for everyone, including those who don't need or want it. An aftermarket privacy screen is probably a more cost-effective and appropriate solution for now.
