I'm not sure whether or not I should, because if I upgrade my MacBook Pro to the newest model with USB-C then the Thunderbolt Display won't work (right?)

I'm currently using a 2013 rMBP 2.6/8/256 without issue.
 
The new MacBook Pro's still have Thunderbolt, but it is in the USB-C form factor. The ports can act as either USB-C or Thunderbolt ports depending on what is plugged in, so you can upgrade to the latest model without any worries.

Keep in mind that the baseline model MacBook Pro only has two Thunderbolt ports, and the higher-end models have four ports.

So will the Thunderbolt Display work with the new Macbooks?
 
Buying a Thunderbolt Display (which was introduced in 2011) in 2017 would be a remarkably bad decision.

Whether you upgrade your laptop or not, buying a TB display would be a bad decision. You can get way better panels that can also act as a hub (via upstream USB/TB).

It's your money, but that is a very daft way to spend it imo.
