If you order it now, there's some chance it'll ship early and you'll be all set before you leave.
If you don't order it, then there's zero chance it'll arrive before you leave.
You can always cancel the order before it ships if you find one in-store.

As above stated, You could order now, the date currently is just an estimate. So it could arrive sooner. Place an order now.
In the meantime, check Apple.com for any in-store pick up availability near the apple store you are in. If it’s the model that you want is in stock, order that, pick it up, and then cancel the other one you placed for delivery.
