With the Series 7 coming out this autumn, I was wondering if it’s worth waiting for it or should I just buy the 6 now? It’ll be my first Apple Watch and although I can live without a watch, I am curious to get one.

From what I saw on the Apple Store earlier today, most of the Series 6 stock is unavailable. I think the Series 6 will be released next month. I would wait unless you happen to see the price of the Series 6 on sale for the $250.
You've gone without one for this long. At most you're waiting another two months (I highly doubt they'll release it after Thanksgiving for fear on losing holiday sales)
If you absolutely want one right now, Walmart has most Series 6 models for $50 off. Other stores like Best Buy/Target will price match that.
