I have a 2020 MacBook Air connected via USB C to a Philips Brilliance 329P9H, which has a built-in USB C dock. I have an Ethernet cable and USB A speakerphone (which I use as my default microphone and speaker) connected to the dock. Do I need to shut down the MBA or put it to sleep before I disconnect it from the monitor or can I do it while it's running? Wasn't sure if there's a "right" way to do it to minimize weirdness...

No, but if you have any storage devices connected to the hub, you should eject/unmount them properly before disconnecting the dock.
