So I’m using an iPhone X and I am going to upgrade to iPhone 11 Pro Max as I really want the bigger phone.

I normally get space grey but really would like to get the gold as I’ve always liked the gold colour and I’ve heard this year the gold looks really good. All the stores I’ve been into haven’t had a gold iPhone 11 Pro on display.

However both my iPad pro 2018 and Apple Watch gen 4 are space grey.Would it be odd to get different colour phone ?

The gold 11 Pro Max does look nice, but I think the only one who can really answer your question is you. I will say that I think the space gray and gold colors do go well together.. I was even thinking about putting a gold watch band on my space gray AW Series 4.
 
In my opinion - no. They’re seperate devices. There will be people that like to colour coordinate devices but I personally don’t think it’s a big deal. Also consider how when you put a case on the 11 Pro Max, most of the phones colour will be covered up.

I have a Stainless Steel Apple Watch because I like the “classic” look it gives the Watch. My iPhone (11 Pro) is Space Grey meanwhile because this is the colour I liked the look of the phone the most. Thats all there is to it.
 
I match watch band, belt and shoes, my phone is in a black leather case and doesn’t generally match. Keep in mind you can do whatever you want as long as you do it with confidence, don’t let some arbitrary rules dictate your preferences.
