I can't even walk normally without it shuffling every step! Is this normal!

First thing I did when I turned on the iPod app is disable it in the Settings. Dumbest feature ever, hated it when they added it to the 3G.

Yup. Lock the screen or disable shake-to-shuffle.
 
When did the OP say it was in his pocket?
Maybe he is walking with the phone in his hand browsing/texting/etc?
 
I know, I disabled it right away, but I was really looking forward to this feature !

Ok, facepalm. I put it in my pocket without locking it. I haven't gotten that habit.

Hmmm wierd it only ever shuffles if I forget to lock in in my pocket, and I'm always walking and texting.
It only shuffles if you have the music player open doesn't it?
 
Have you tried adjusting the settings? You can control how random shuffle is by going to edit-->preferences-->playback tab. Then move the slider on the "smart shuffle" to less likely.
Also, the shuffle is very proportional to what you have in your library. So if you have a lot of songs from a certain artist, that artist will pop up more often.

The OP was talking about "shake to shuffle."
