When i mount a volume, (Finder > Go > Connect to Server > smb://servername) it asks me what volume i want and when i mount it it opens a finder window. I have no problem with the window opening but I want the finder sidebar in the window that opens.

Finder > View > Show toolbar (or Option-Command-T)
 
Clicking Show sidebar has no effect and it goes back to the way it was when I un-mount and mount it again
You have to show the toolbar first, then the sidebar. If you hold the Option key while you close the Finder window with them visible, it should remember those settings when you open another Finder window.
