Hello,

I will be purchasing a new iPod touch soon, but I want to use it solely for music and a few apps that won't run on iOS 11.

Ideally I want to sign into the App Store to download purchased apps and updates for those few apps, but not use icloud for anything else. However, when I sign into the App Store on my mothers Mac Mini for maintence and updates it becomes a trusted Device on my account.

Is it possible to sign into a new device without making it a trusted device? Or is syncing apps and updates through iTunes my only option?
 
Can you just remove that signed device from trusted device list after updating apps? Or is it impossible?
Not bother 2FA so I did not know a lot.

You can, but you'd have to do that ever time you sign in.
