Do you have to be physically home when the watch gets delivered? Is there a way to pre sign for it if not? Never had Apple ship anything before.

You can presign for the delivery once it ships. There will be a button on your order status for printing out a pre-sign slip for FedEx/UPS that you then tape to your front door. Unless they decide to not offer that as an option for the Watch and require in-person delivery.
