I am selling my old iPhone 6 Plus. It is not in service, no SIM card. My new iPhone 11 Pro is in service now for quite some time. I cannot sign out of iCloud on the 6 plus. When I go to my name under settings and hit iCloud there is nothing at the bottom of the screen that says sign out. I was able to successfully sign out of iTunes. After I get signed out of iCloud what else do I have to do to make sure none of my info is on old phone? Thanks!
 
It's odd that you can't sign out of iCloud, and I don't know what would cause that. You'll want to do an erase and reset to ensure all of your data is removed. There's some other things to check as well as mentioned in this support article:

 
If you can just Turn off Find my iPhone…that's enough. You can go to Settings > General > Reset > Erase All Content and Settings. It completely erases your device, including any credit or debit cards you added for Apple Pay and any photos, contacts, music, or apps. It will also turn off iCloud, iMessage, FaceTime, Game Center, and other services. Your content won't be deleted from iCloud when you erase your device.

If you want to properly Restore the device, plug it into a Mac/PC with the latest version of iTunes – and hit Restore. This will download the latest version of iOS to your computer, and wipe the device completely. This is more thorough, and would probably fix any software issue if you had any – because your deleting the operating system and firmware and installing it from scratch using an IPSW file that iTunes will fetch from Apple's servers.

But you have to disable "Find My iPhone". If you can't do it on the device, go to
If for some reason that's not working, force restore the device and when it boots up as new – remove the Activation Lock with your password.
 
So if I go to settings and erase all content and settings that won't take everything off of my new phone if I'm still signed into iCloud on old phone? I went in on my new phone and added things here and there to test it and it did add those things to my old phone. I added things like new notes, updated grocery app, made changes in upward.
 
Please tell me I've misunderstood what you did. Are you saying that after doing an erase all content and settings, you reset up your old phone? If you do that, of course it will sync with iCloud because you signed into your account during the setup process. Per the instructions in the support article I posted to you previously, you want to erase all content and settings and then not set it up again. That way the phone is not associated with your Apple ID and hence, your iCloud data. You may want to re-read that article and use it as a checklist.
