I chose to have my Apple Watch 6’s Do Not Disturb settings mirror my phone. Every night when I go to bed, my phone automatically goes into Do Not Disturb mode. I verify that my watch is also in DND mode as well. However, my watch still “dings” for notifications. How do I automatically silence these notifications on the watch like they are silenced on the phone?
 
I would try turning on Silent Mode in the control center by swiping up from the bottom. Think that will solve your issue.

- I tend to turn off wifi on my watch and bluetooth on my phone which stops any vibrations / notifications completely.

I also just checked on my phone and DND does not turn off BT on the phone so thats why you're getting the "dings"

Yes, silent by itself will not stop vibrations, but silent + DND should completely stop everything.
Do not disturb by itself should also turn off both vibrates and dings
seeing as both things are pretty disturbing, that makes sense.
bluetooth doesn't disturb you, so it makes absolutely no sense that it should turn off with DND.

Don't turn off the radios. It will stop the dings, but it's way overkill. And you're making something way more complicated than it needs to be.
It's kinda like turning off the main breaker in your house to turn off one light instead of using the switch on the wall. It will turn off the one light, but screws everything else.

If you are going to do it, you don't need to dig into multiple settings on different devices, it's much easier to just hit airplane mode on the watch.
Plus if you're turning off bluetooth in the control center on the phone, it doesn't really turn it off, your watch will still connect via bluetooth, you have to turn it off from the main settings app on the phone.

the hourly chime?
notifications? what apps?

does it also vibrate?

do you have favorites in contacts?
there are options to let those ring though even though DND is on. Although I think this only applies to phone calls, and not messages.

Silent mode might be the answer you're looking for.
