I just traveled to the uk and I wanted to get a sim card for it, when I went to a phone shop and asked for a card the guy asked me what phone I was going to put it in. I told him an iPhone and he told me that it would lock my phone even though it's an international unlocked iPhone. Is this true? I know I could unlock it but I don't want to erase the phone.

That guy didnt know what he was talking about.
An officially unlocked iphone will never lock no matter what sim you put inside.
You dont have to erase or restore anything. Next time just get the sim and tell him to keep his nonsense to himself.

Thanks I was surprised when he told me that.
