You will get a new sim card with the new phone, but there isn't any reason why you can't take your old sim card from the 3G and put it into the 3GS.

My sim card stopped working for some reason on my 2G iPhone and AT&T just gave me a new one to take home and put into it... they aren't specific for the iPhone.
