When I bought my Xr I inserted the ATT SIM from my 2 year old SE .... it worked perfectly and ATT didn't charge an activation fee. The SIM is about 3 years old now.

While shopping for a 11pro I mentioned this to the salesperson and was told that using an older SIM wasn't a good idea because some of the phone features might not work.

Is this correct?

Yes, features like VoLTE are controlled by the SIM card.

But a two year old SIM isn't that old.
 
the SIM is about 3 years old now .... it's no big deal but I'd like not to pay ATT an activation fee and I think the only way is to recycle the SIM

If AT&T and/or your new phone adds new features that the SIM card doesn't support, you'll (repeatedly) receive a text message from AT&T notifying you of this fact and telling you to go to an AT&T store to get a new SIM card free of charge.

This happened to me when I upgraded to my iPhone 6 and needed a new SIM card to be able to use VoLTE and WiFi calling. So don't worry about it; they're sure to let you know if you're missing out.

(and yes I still have this screenshot of it from 2014; I save freaking everything)
