Hi, does anybody know what I need to do to an application under /Application in order for it to show up in Simple Finder? Most apps show up, but not some, so I wonder what the requirements are.

Use the 'Accounts' preference pane

In the account settings in System Preferences, click on the account, go to the 'Limitations' tab, and under the 'Simple Finder' option, you can check (or de-check) which applications should be visible.
 
Right, I'm wondering why some apps are not even in the list for me to check or uncheck. What does it take for an app to show up in the list?

Ah, click the 'Locate' button. The list doesn't automatically add apps in sometimes.
