When viewing images im currently using the preview app which is very slow at rendering high res jpgs etc. Is there a better app for just viewing jpgs I can use as a default?

I'm very satisfied with Xee 3 (the next picture in the current folder is always pre-cached) but it is not optimized for Apple Silicon.
Not tested personally, EdgeView 3 is mentioned as a worthy successor (no trial to test unfortunately).
 
Depends a bit on why you are viewing.
If is your aim to cull or classify images then how about Finder in Views as Gallery mode. Or, if you want to pay for it, GraphicConverter.
If you are really "just" viewing, I quite like Pixea. But there are numerous similar apps.

I was a long-time fan of Xee, but it has effectively been abandoned. I'm using EdgeView 3 now and it's quite excellent. But Lyn is one other that I only recently discovered and I think I would give this the nod over EdgeView 3 if I hadn't bought EV3 already.

The amount of grammar errors on EdgeView 3's website is staggering. Hopefully the app isn't filled with them as well.
 
The best I have found so far is XnView. It has all the feature required including gamma correction,ICC profiles,Pre caching ,browser,lightweight..and still in active development. Got two big updates since I have been using it.

Best of all it's free.

English isn't the developer's primary language, but he does fine. The app is fine. Just how good does the grammar need to be anyway for looking at pictures?
 
For loading speed, I usually create a RAM disk and load all the images there. That's that fastest you are gonna get.

I have files on a server connected via 10 GBE connection and Ramdisk wins in loading speed.
 
Tried xnview but can't pinch to zoom on the trackpad like with preview. I want to try something similar to preview but much faster.

I don't do pinch-to-zoom myself (CMD-+ is my preference), but I just tried it out and I can tell you it works fine with EdgeView 3, pretty much the same experience as in Preview. I also tried it in Lyn (my other rec), and it was rather choppy... not at all nice and smooth like it is with Preview and EV3.
