Is there a simple app I could use to record video (from built-in iSight camera) for a podcast? I need to record 30 fps, 44000hz 24 bit audio. iMovie seems kind of complicated and maybe overkill.

Just as simple as that: Start QuickTimePlayer, then choose File > New Movie Recording.
Not really. Click Import, then select iSight from the camera window. Then create a Project with your footage and Export/Share to File.
