Simplist way to convert via Handbrake

I have AVIs and MKVs I want to convert, to watch on my iMac, Apple TV, and iPad. I have been reading for hours about different type of settings that need to be changed, but its real confusing. Not taking into account subs, is there a setting for the AVI and for t he MKV that I can just set it to and start converting? I have 8tb of HD space, so I have space, and I just want to keep the quality similar, but at the same time downsize the file.
