Can anyone tell me how I can stop the siri lookup bubble every time I'm simply trying to copy some text on an application or page:

I find them super annoying, and prevent me from just doing a simple copy function.

That does look annoying! I don't have an answer for you (I don't get such a bubble), but it might help if you told us what application(s) you notice this problem in. For example, Pages, Textedit, Safari, Preview, some other app? Or does it really show up in many different apps?

Might be good to include your version of macOS, also. (You can get this from the "apple" icon in the menu bar by selecting "About this Mac".)

What you show does look vaguely familiar to me, but it's not something I often see when I select text to copy.
It looks like something that could be turned off, though.

I eventually found it that first night. It is under SETTINGS > TRACKPAD > Look up & data detectors -- seen on this screenshot:
