When I do a request for Siri to remind me of something I need to do let's say at the end of the day, it seems it puts it on my calander but it doesn't pop a reminder notification up or anything at the time I request it to, any ideas of why?

Honestly, all she says is "Okay, I will remind you" and then it shows a confirm of what I asked, so I am not sure, all I know is she doesnt remind me of sh*t!! LOL

Well, Siri uses something for the reminders, most likely the Reminders app. You'd want to check on your settings for the Reminders app and for Calendar as well to see if you have alerts enabled and all that (and make sure that you don't have Do Not Disturb enabled on the phone) as all those things can affect as to whether or not you'd get alerted about something.
