Why is it that Siri can recognize speech and detect when you have stopped talking then search... but voice to text does not detect when you have stopped talking and you have to click done? I like voice to text while driving but hitting "done" kind of defeats the purpose of not having to look at your phone.

why not just add the same recognition to voice to text or at least have an option for those who want and do not want it.
 
You could just have Siri compose the message for you. I haven't tried, but the speech-to-text might time-out. I think it's to give you more time as you're likely to be composing longer text (long enough to warrant using it at all), whereas Siri is typically shorter questions and requests.
