Siri works great for me over Wi-Fi, even with my phone is indicated as out of range.

Hey guys—
I'm assuming this is common knowledge already but Siri works for me even when my phone is on airplane mode and the watch displays the red "no phone" icon. I actually use this almost every day when my phone is charging but I think of something that I want to do like check something on Wolfram Alpha.

So, there is some Wi-Fi functionality (I use it regularly) but maybe not the full "remote pairing" that it could be on v1.0....
 
Siri isn't processed by your iPhone it's processed by an apple server so it makes perfect sense that it will work regardless
