I find Siri to be most unreliable on my watch out of all my devices. I just asked her to set a timer for 6 minutes and she said “You do not have the timer app installed” and then referred me to the App Store to search for timer apps. Apparently, this isn’t an uncommon issue given that over 600 people are having the same problem on the Apple support forums. Luckily, it worked as normal when I tried to request the timer again via Siri again.
I’m also most likely to get “It doesn’t look like you have any HomeKit accessories installed” on my watch when I’m trying to control my Philips Hue lights.

How does Siri appear to be getting worse and buggier with time instead of getting better? I mean these are supposed to be the most basic of tasks that Siri was created for in the first place 11-12 years ago…

That’s crazy! I think Apple is deliberately sabotaging Siri so that when the next release puts it back to normal we will all rejoice. 🤭 (that’s a complete joke btw)

Siri seems best on my iPhone and worst on my HomePods. My favorite is when I say to turn on the lights it says something about it has made the updates to settings. 🙄
 
Yesterday I told Siri to intercom the office and tell my kid that dinner is ready. All the lights in the house turned off.

I’m convinced that Apple is trolling everyone with Siri.
 
I moved to another assistant.
I’ve said hey siri what song is playing.
I’ve gotten no internet connection, that service isn’t available.
Can’t find the song and other failure messages .
I gave up on Siri
 
“You do not have the timer app installed”

Happened for me a few times with my HomePods. Repeat the timer request and it usually works.

“It doesn’t look like you have any HomeKit accessories installed”

This is a more perplexing problem. Get this message on my HomePods but the accessories are in all of my other devices homes and they work. Sometimes problem went away, other times not.

When it didn't go away I had to:

1. Unpair Stereo Homepods
2. Reset each one individually
3. Repair them

which seems to work. Although your problems are with a watch thought it might give you some ideas.

Siri is appalling on Apple Watch. Some of my reminders are comical as Siri seems often incapable of understanding a clear and well spoken English accent. My personal favourite though is my watch telling me I have ‘no timer app installed’ when I am cooking and in a rush. I actually skidded my watch across the kitchen floor last time it did that and asked Alexa instead lol.
 
Guess im lucky, I used Siri for shopping on the watch, SE twice and had no problem.
but then, I kinda wish Siri would recognize what is in my music library tho
