SL Safari Notes and Speech to iTunes??

A couple of weeks ago I saw a video on CNet demonstrating new features of Snow Leopard. One of them shown was in Safari. He showed that you could highlight text on a page, right-click on it and select to add the text to Mail as a note or send it to iTunes as speech.
I don't see either of these options. Did Apple remove this?

In the safari menu, go to services, then services preferences. You can configure the services options from there.
