I want to use a separate slave drive in iTunes for my movies relative to my music. How do I specify a separate drive to import the movies from my regular music stuff?

I'm not sure you can. "Movies" is a sub-folder in the iTunes library. However, I would think that Apple will reorganize the library design now that movies/tv shows are a bigger part of the whole package.
 
Go to your iTunes preferences, click advanced, then go to General. Uncheck the choice saying, "Copy files to iTunes music folder when adding to library." This should allow you to add them to iTunes and sync them up with whatever you'd like w/o having them clog up your master drive.
