I've turned off the full sleep schedule on my AW so that it doesn't wake me up at a specific time, but will it still track my sleep when I eventually go to sleep? I have a very erratic sleep routine, but I also want to determine my sleep times.

Does the AW still track your sleep without your sleep schedule being turned on?
 
I don't believe it does, or at least for me it was very inaccurate. There's an app called Autosleep that can detect when you fall asleep and allow tracking that way though.
 
Another topic about this…

Put any random schedule (1am to 5am or whatever) without alarm (just disable it) and that’s all.

You will have your sleep data.


Apple need to do/change/explain better something because it’s not normal that so many people have problems with something so basic.
